pizza. how i love thee. but this version is pretty damn good. and i bet it will curb your cravings.
sweet potato pizza
makes 4 meals
(recipe from health-bent)
4 medium sweet potatoes
pizza sauce (no sugar added or make your own using their recipe)
8 oz mushrooms, sliced
black olives, sliced
1 lb sausage
any pizza toppings you like will work (banana peppers, broccoli, etc.)
1. preheat oven to 400. pierce sweet potatoes and wrap in tin foil. bake until fork / knife pierces easily. once cooked, open up and slice down the middle. smash down and loosen the potato. place back in oven (flat and open faced) for 5-7 minutes to roast the outsides.
2. while potatoes are cooking, heat skillet and add in sausage. once the sausage is almost done, add in mushrooms and another other toppings that would need cooking prior to assembly.
3. eat. assemble pizza with open faced potato with sauce, sausage, and toppings.
