it's no secret paleo-ians (is this a word?) miss pizza. if you google "paleo pizza" you'll find hundreds of recipes. i've never ventured to make the crusts they people speak of, mostly because they are more primal (with cheese) than paleo. and i am unforetunately not able to eat cheese. SO. i make pizza out of other things.
like mushrooms. and sweet potatoes. but that is another recipe. just dream about it.
portabello and sausage pizza
makes 4 meals
4 portabello mushroom caps
1 lb green beans
olive oil
1 lb sausage, spicy if you can handle it
16 oz. can tomato sauce
16 oz. can crushed tomatoes
red pepper flakes, to taste
4 tbsp dried oregano
1 tbsp garlic powder
1 tbsp dried onion flakes
1/2 tbsp dried rosemary
1. preheat over to 400. wipe clean the portabello and place gill side up on tin foiled roasting pan after brushing olive oil on both sides. sprinkle s&b on poratbellos and place in over. 10 minutes in, flip over and roast for another 10 minutes.
2. roast green beans with olive oil and s&p for 20-30 minutes depending on your crunch preference.
3. in a large skillet, place sausage in hot pan and cook until slightly pink but mostly cooked. add in remaining ingredients and s&p to taste. let simmer for 10 minutes or longer depending on what you have going on in the oven. it should all end up done at the same time :)
4. eat. pile sauce on top of portabello and add your side of greens.
