mahi mahi tacos with slaw

you know those things that you do that you sit back and think...shit i'm awesome?

this was one of them. *toot toot* (my horn)

this is a great july fourth meal. i'm not too sure why other than it just seems like an 'MURICAN meal. fish tacos? yes, sign me up.

AND this is a very simple meal.


mahi mahi tacos with slaw
makes 2 meals

mahi mahi, thawed (i buy the frozen wild caught pieces from trader joe's -- super cheap and super tasty!)
1 grapefruit
s&p
1 bag cabbage slaw mix [trader joes has the best mix IMO. usually purple and green cabbage and carrots]
1/2 cup apple cider vinegar
1 tblsp honey
lime juice from one lime
avocado
jicama 

1. make salw by combining: slaw mix, acv, honey, and lime juice. put in fridge to marinate.
2. peel and slice jicama. i use my mandoline. you need to get them SUPER thin to make them work as taco shells. so just buy one already. it's so worth it. (if you don't want to do this, cube jicama and make a salad)
3. to cook the mahi, place mahi, grapefruit juice from one grapefruit, and s&p to taste in a skillet and bring to a simmer. once cooked, remove fish from pan and drain.
4. eat. place jicama shells on bottom and layer with slaw and avocado slices. AND HOT SAUCE! 

altnernate version: add in mango cubes, jalapenos, and red onion to the slaw. yummyyyyy
