mahi and beet noodle salad

beet noodles. they will change your life. promise.

unless you hate beets. then don't make this. but if you are scared of beets and you haven't ACTUALLY tried them, then you better make this and come and tell me how happy you are that i strong-armed you into it.

mahi and beet noodle salad
makes 3 meals

2-3 beets, judgement call on size
mahi mahi pieces
brussel sprouts, quartered
green beans, ends trimmed
cheery tomatoes
red onion, sliced
olive oil
grapefruit / lime juice

1. preheat oven to 350. roast beans, onions, brussels, tomatoes on tin foiled sheet for 20-30 minutes with olive oil and salt.
2. peel and spiralize beet. toss in olive oil and place on another tin foiled sheet (or put it all on one if your oven is small like mine) and roast 30 minutes, until tender.
3. cook mahi pieces in grapefruit or lime juice on stove top in skillet with salt and pepper. don't overcook!
4. eat. pile everything on top of a plate of arugula. add on some avocado for an extra treat!
