chicken and guac salad

guacamole. guacamole deserves it's own post. but it won't be this one.

there was once a time that i thought avocados were gross. and i'm pretty sure i never tried them before saying that. but that time was a time i was probably depressed. and then i tried an avocado. and THEN i tried guacamole. and THEN the sun starting shining a little brighter. my smile was a little bigger. and the world was right again.

then i put that shit on everything.


chicken and guac salad
makes 3 meals

3 chicken breasts, cooked and cubed
1 bunch of kale, steamed and chilled
2 green peppers, cubed
3 avocados
1 clove garlic minced
1/4 red onion, minced
1 cup cilantro, chopped
1 jalapeno, minced
1 lime
s&p

1. if you don't already have cooked chicken, do that first. grilled chicken would be BEST here. but if you don't have a grill (like me) just roast on 350 for 30-40 minutes with some mexican-ish spices.
2. steam the kale with salt and place back in fridge to chill.
3. make the guacamole by mixxing: avocados, garlic, red onion, cilantro, jalapeno, and lime juice. add s&p to taste.
4. eat. assemble in a bowl and you're DONE!
